Last year I tasted gin and tonic cake for the first time at The Oliver Conquest, along with some scrumptious fruity gin truffles, but I took a long time to getting around to baking it myself!
My first attempt was for the work bake-off before Christmas and all was going smoothly before I managed to whack the oven up to the max by accident (I thought I was turning on the grill for my dinner :s). The cake came out very well except for the singed top!
My second attempt this weekend was more of a success:
I have a way to yet before I manage to reproduce Lucy’s from the Pudding Lane blog.
This is basically a lemon drizzle cake, but instead of drizzling just lemon juice & sugar over, you add gin and tonic (optional!) to the drizzle. This means you have an incredibly moist cake, with lots of lemon flavours & depending on how much gin you use, quite a kick!
The recipe can be found here on the Pudding Lane website.
I recommend you having a go – the citrus & spirit can be switched up if you dint like gin (heaven forbid!), I’ve seen people suggest mojito cake with rum and lime – that could be tasty 😉 let me know how you get on!
